"Preview" means unreleased, and you become their beta tester.  Using
preview software means you accept the unreliability of the software.
They want users to participate in their QA testing.

Perhaps the Outlook betaware overwrote (removed) the existing Mail
installation.  The beta version might`ve deleted the old Mail app to
install the beta app.

Unlikely the MS Store is going to list alpha/beta software, and
"preview" means "beta" or "unreleased", so expect it to phuck up.  Is
there a reason you volunteered to be unpaid beta tester for software you
expect to be as reliable as a released version?

Unlike the article states, for my Windows 10 Mail app there is no "Try
the new Outlook" toggle button (which makes me suspect the toggle
remains after the switch to get back to using the Mail app).  However,
I`m not subscribed to MS 365 nor am I a registered Insider member.

Are you an Insider risking your critial host to the use of betaware?

Does the Outlook *preview* app show up in Add/Remove Programs list?  Did
you try uninstalling that before trying to get the Mail app installed?
