Title: Gluten-Free Shortbread Cookies

Yield: 66 servings
1 c Butter; softened
3/4 c Confectioners` sugar
1/2 ts Salt
1 ts Vanilla extract
2 c Gluten-free A-P baking
- flour
In a large bowl, beat butter, confectioners` sugar and
salt until blended. Beat in vanilla. Gradually beat in
flour. Shape dough into a disk. Cover and refrigerate 30
minutes or until firm enough to roll.
Set oven @ 325oF/165oC.
On a lightly floured surface, roll dough to 1/4"
thickness. Cut into 2" X 1" rectangles. Place 1" apart
on greased baking sheets. Prick with a fork.
Bake 12-15 minutes or until edges are golden brown.
Remove from pans to wire racks to cool.
