Title: Tilapia Florentine

Yield: 4 servings
6 oz Bag fresh baby spinach
6 ts Oil; divided
4 Tilapia fillets (4 oz ea)
2 tb Lemon juice
2 ts Garlic-herb seasoning blend
1 lg Egg; lightly beaten
1/2 c Ricotta cheese
1/4 c Grated Parmesan cheese
Lemon wedges; opt
Add`l grated Parmesan; opt
Set oven @ 375┬║F/190┬║C.
In a large nonstick skillet, cook spinach in 4 teaspoons
oil until wilted; drain. Meanwhile, place tilapia in a
greased 1" X x 9" baking dish. Drizzle with lemon juice
and remaining 2 teaspoons oil. Sprinkle with seasoning
blend.
In a small bowl, combine the egg, ricotta cheese and
spinach; spoon over fillets. Sprinkle with Parmesan
cheese.
Bake until fish just begins to flake easily with a fork,
15-20 minutes. If desired, serve with lemon wedges and
additional Parmesan cheese.
