Title: Green Pea Soup

Yield: 1 Batch
2 c Green peas; cooked
1 1/2 c Water; boiling
2 tb Flour
1 ts Salt
1/8 ts Pepper
1 ts Sugar
2 tb Butter
2 c Milk
Cook peas in boiling water, until very soft. Press through a coarse
sieve; there should be 2 c stock. Melt butter; blend in flour and
seasonings. Add vegetable stock, gradually; stir and cook until
thick. Add milk, hot or cold; reheat. Strain and serve at once.
