Title: Sausage, Blueberry & Apricot Casserole

2 c Complete buttermilk pancake
- mix
1 c Whole milk
2 lg Eggs; lightly beaten
1/4 c Oil
1 c Fresh blueberries
15 oz Can apricot halves
1 lb Pork sausage; cooked,
- drained
1/4 c Sugar
1 tb Cornstarch
1 ts Lemon juice
1 tb Butter
3/4 c Syrup
Set oven @ 350oF/175oC.
In a large bowl, whisk pancake mix, milk, eggs and oil;
fold in blueberries. Pour into greased 13" X 9" in.
baking dish.
Drain apricots, reserving 1/4 cup syrup. Slice apricots,
place over pancake batter; sprinkle with sausage. Bake
until edges are brown and a knife comes out clean, about
25 minutes.
Meanwhile, in a small saucepan, whisk sugar and
cornstarch. Whisk in reserved apricot syrup and lemon
juice. Cook and stir over medium heat until thickened
and bubbly. Reduce heat to low; add syrup and butter,
cook and stir 2 minutes longer. Remove from heat. Serve
with warm casserole.
