Title: Texas Pecan Pie

Yield: 6 servings
1 c A-P flour
1/4 ts Salt
1/3 c Shortening
3 tb Cold water

1 1/4 c Chopped pecans
1 c + 1 tb lt corn syrup
3 lg Eggs
1/2 c + 1 tb sugar
1 1/2 ts Vanilla extract

In a bowl, combine the flour and salt; cut in shortening
until crumbly. Gradually add cold water, tossing with a
fork until a ball forms.
Roll out dough to fit a 9" pie plate. Transfer crust to
pie plate. Trim crust to 1/2" beyond edge of plate;
flute edges. Sprinkle with pecans.
In a small bowl, beat the corn syrup, eggs, sugar,
vanilla and salt until well blended. Pour over pecans.
Bake @ 350┬║F/175┬║C until a knife inserted in the center
comes out clean, 45-50 minutes. Cool on a wire rack.
