Traditional Pizza Dough
1 c Fresh tomato salsa
1 c Black beans;
- cooked or canned,
- rinsed & drained
1 Chipotle chile in adobo;
- finely minced
2 tb Fresh cilantro; minced
Salt
Black pepper; freshly ground
Preheat the oven to 450?F. Punch the dough down. On a lightly
floured work surface, roll out or stretch the dough into a circle
about 1/4" thick. Lightly oil a pizza pan or baking sheet and place
the dough on it, stretching it to fit. Bake on the bottom oven rack
for 8 minutes.
In a medium-sized bowl, combine the salsa, beans, chipotle chile,
cilantro, and salt & pepper to taste. Stir to blend.
Remove the crust from the oven and top with the salsa & bean mixture,
spreading it to within 1/2" of the edge. Bake until the crust is
golden brown, 10 to 12 minutes. Serve hot.
