      Title: Caraway Seed Soup
 Categories: Soups, Ukrainian
      Yield: 1 Batch
 
      2 tb Caraway seed; up to 3 tb
      1 c  Water; boiling
      1 c  Mixed vegetables; diced
      4 c  Water
      2 tb Flour
  1 1/2 tb Butter
           Salt & pepper
           Buttered croutons
 
  Wash the caraway seed, add it to the boiling water, cover tightly, and
  simmer very gently for about 10 minutes. Set it aside to steep. Cook
  the vegetables in the water until they are tender. If a clear soup is
  desired, strain the vegetables and use the vegetable stock as the
  base for the soup. Brown the flour lightly in the butter, pour some
  soup into it, stir until smooth, and add to the remaining soup. Add
  the strained caraway seed liquid and discard the seed. Season the
  soup to taste and bring it to a boil. Serve with buttered croutons.
