Title: Bacon Waffles w/Bacon-Whiskey Sirop

4 c Pancake-waffle mix
3 c Milk
4 lg Eggs
8 tb Oil
1 lb Bacon; fried crisp
MMMMM----------------BACON-WHISKEY INFUSED SYRUP---------------------
1 c Sugar
1/2 c Bourbon whiskey
2 sl Cooked bacon
EQUIPMENT:
A large pot
A small saucepan
Sous vide machine
Ziploc bags
Pint jar
MAKE THE SYRUP: Fill up large pot with water about 3/4
to the top.
Insert SOUS VIDE circulator and set to 150┬║F/65┬║C.
Add WHISKEY and sugar to saucepan, bring to a light
boil, stirring frequently.
Remove saucepan from heat.
Cook bacon until crispy.
Add bacon and syrup to Ziploc bag
Seal bag and leave in immersion circulator for 90
minutes.
Remove syrup and transfer to a PINT bottle.
Store in the refrigerator for up to 6 months.
MAKR THE WAFFLES: Mix first 4 ingredients together well.
Let set for 5 minutes. Heat waffle iron just before the
waffles have sat. I spray my waffle iron with pam. Add a
ladle full of waffle mix and sprinkle cooked crumbled up
bacon on batter, close. Remove when golden brown.
Serve with the Bacon-Whiskey Syrup.
